Ric Dennis’s unique background has earned him multi-faceted expertise, especially in food & beverage operations, catering sales, and team member training & development. Dennis discovered his passion for hospitality as a student, when he toured Europe with the world-famous special events group, Up With People. That early taste of world travel, event planning, and sales grew into the thriving career that now benefits our clients.

When his tour group began a long-term engagement at Sea World San Diego, Dennis took the opportunity to learn event sales and management. He soon became a hotel catering sales executive, and later Director of Food and Beverage at the upscale Catamaran Resort, where he controlled a $7-million budget.

While successfully managing Food & Beverage and Catering Sales at several properties, Dennis learned to implement employee training and development programs that yielded substantial bottom-line results. Using these skills, he helped The Lodge at Torrey Pines to achieve and maintain AAA Five Diamond status and a guest service satisfaction index of 91% – 93%.

Meanwhile, Dennis has continued coordinating events of up to 10,000 participants. He frequently directs sales, budgeting, staffing, food and beverage, and operations for such notable events as the Buick Invitational (a.k.a. Andy Williams Celebrity Golf Tournament), the Concours d’ Elegance, and a spectator fleet for the America’s Cup.

Dennis’s consulting projects include both single-property and corporate-level work. He develops service branding standards and supporting training for one client’s 14 facilities. Another client is a luxury resort where Dennis oversees service standards, job descriptions, and an orientation program.

Mr. Dennis is a participating member of the National Association of Catering Executives (NACE), and the Hospitality Human Resources Association (HHRA).
